A little sun has begun to shine in the last couple of days, and I am wishfully interpreting this as the end of Winter and the beginning of Spring. True, I'm sitting by the heater (that never turns off), with the window open, but the sun is pouring into my apartment and I'm eating a light, bright summer salad--feels like Summer to me.
Recipe: A handful of arugula, half a chopped tomato, 1/3 sliced cucumber, lemon juice, olive oil, cracked pepper, salt, and parmesan (I'd probably have gone with feta or mozzarella, but parmesan worked well too).
If you're in California, I'm sure you've been eating salads all "Winter", but for everyone else, you can, too (indoors and next to a heater).
