Sesame tuna ceviche is a fast fresh dish that can be put together in minutes, especially if you choose to buy the serving chips. The most important part of the recipe is hunting down a bright pink, luscious looking piece of sushi-grade ahi tuna (yellowtail). Make friends with your fishmonger. I recently purchased mine at Fish Tales in Brooklyn, which I highly recommend. Ahi tuna is most abundant in the summer months, but it's available all year.
Combine the ingredients of the marinade first in a bowl. Then, carefully dice the ahi tuna and add to the marinade, ensuring that the marinade completely coats the fish. Sprinkle a combination of black and white sesame seeds, which look beautiful against the ripe pink of the tuna and some texture. The tuna can be served immediately or can marinate for 10-15 min. I doubt it will stay on the table longer than 15 min. after it's served to guests. Tasty.
