This bread was my first time baking bread with my own mature starter. I followed the Tartine Bread instructions as closely as possible, and it turned out beautiful. What a great feeling to harness the energy of a living organism to make something so beautiful and delicious with your own hands. Flour and water is all you need. Once you tap into the rhythm, baking bread is a form of meditation--your brain obediently trails along, as your body leads the way.
